Prepare the Chicken
Season the chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sauté for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.

Make the Sauce
Pour in the brandy and let it simmer for 2-3 minutes to reduce slightly. Then add the heavy cream, stirring well, and let it cook for another 4-5 minutes until the sauce thickens.

Combine and Serve
Return the chicken to the skillet, coating it with the sauce. Serve the chicken with cooked spätzle and fresh vegetables on the side. Drizzle any remaining sauce over the top.
