Prepare the Cashew Crust
Preheat your oven to 375°F (190°C). In a food processor, blend the raw cashews until finely chopped. Combine the chopped cashews with panko breadcrumbs, salt, and black pepper in a bowl.

Prepare the Chicken
Season the chicken breasts with salt and pepper. Dredge each breast in flour, shaking off excess. Dip into the beaten egg, then coat with the cashew and breadcrumb mixture, pressing to adhere.

Cooking the Chicken
In a skillet, heat olive oil over medium heat. Add the crusted chicken breasts and cook for 3-4 minutes per side until golden brown and cooked through. Transfer to a baking sheet and finish cooking in the preheated oven for about 10-15 minutes.

Remove from the oven and let rest for a few minutes. Serve the chicken alongside lingonberry preserves and a side of fresh fruit.
