    Prepare the Fried Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed potatoes, season with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes. Stir occasionally to ensure even cooking. Once done, remove from the skillet and set aside.

    Cook the Bratwurst

    In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high, and cook the bratwursts for about 6-8 minutes, turning occasionally until browned and cooked through. Remove from the skillet and keep warm.

    Make the Mushroom Hunter Sauce

    In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until softened. Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5 minutes. Pour in the broth and bring to a simmer. Stir in the sour cream and cook for an additional 2 minutes until the sauce thickens. Season with salt and pepper to taste.

    Heat the Sauerkraut

    In a small saucepan, heat the sauerkraut over low heat until warmed through.

    Serve

    On a plate, place the fried potatoes, top with the bratwurst, and drizzle the mushroom hunter sauce over the sausages. Serve with warm sauerkraut on the side and garnish with chopped parsley.
