Ice Cream Base
Method
Making the Ice Cream
- 1
Prepare the Ice Cream Base
In a medium saucepan, combine the heavy cream, whole milk, and sugar over medium heat. Stir until the sugar is dissolved and the mixture is hot but not boiling.
- 2
- 3
Combine Mixtures
Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture. Continue to cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.
- 4
Flavor and Chill
Remove from heat and stir in the vanilla extract and salt. Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- 5
Churn the Ice Cream
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- 6
Freeze
Transfer the ice cream to an airtight container and freeze for at least 4 hours before serving.
