Method

Preparing the Lobster

    Cook the Lobster

    Bring a large pot of water to a boil. Add salt to the boiling water. Carefully add the lobsters and cover the pot. Boil for about 8-10 minutes for 1.5 lb lobsters, or until the shells turn bright red.

    Chill the Lobster

    Once cooked, remove the lobsters and transfer them to a bowl of ice water to stop the cooking process. Allow them to chill for at least 15-20 minutes.

    Split the Lobster

    Once chilled, place the lobster on a cutting board. Using kitchen shears, carefully split the lobster in half lengthwise.

Preparing the Sauces

    Make Sauce Premier

    In a bowl, combine mayonnaise, Dijon mustard, fresh lemon juice, horseradish, chopped chives, and paprika. Mix well until smooth and set aside.

    Make House Cocktail Sauce

    In another bowl, mix together ketchup, horseradish, lemon juice, Worcestershire sauce, and Tabasco sauce. Adjust the Tabasco to your desired spice level.

    Prepare Drawn Butter

    In a small saucepan, melt the unsalted butter over low heat until completely liquefied.

Serving

    Plate the Lobster

    Arrange the split lobster halves on a serving platter.

    Serve with Sauces

    Serve the lobster with Sauce Premier, House Cocktail Sauce, drawn butter, and fresh lemon wedges on the side.
