Method

Tuna Tartare Preparation

    Prepare the Tuna

    Dice the yellowfin tuna into small cubes, about 1/4 inch in size. Place the diced tuna in a mixing bowl.

    Mix the Ingredients

    Add Calabrian chili paste, fresh lemon juice, olive oil, salt, black pepper, and chopped chives to the bowl with the tuna. Gently mix until all ingredients are well combined.

    Chill the Mixture

    Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 15 minutes to allow the flavors to meld.

Charred Sourdough Preparation

    Prepare the Sourdough

    Brush each slice of sourdough bread with olive oil on both sides.

    Char the Bread

    Preheat a grill pan or outdoor grill over medium-high heat. Grill the slices of sourdough for about 2-3 minutes on each side, or until they are golden brown and have grill marks.

Assembly

    Plate the Tuna Tartare

    Remove the tuna mixture from the refrigerator. Using a ring mold or a spoon, place a generous portion of the tuna tartare on each plate.

    Serve with Sourdough

    Serve the charred sourdough slices alongside the tuna tartare. Optionally, garnish with additional chives or a wedge of lemon.
