Preparing the Steak

    Season the Steak

    Generously season both sides of the ribeye steaks with salt and black pepper. Allow the steaks to sit at room temperature for about 30 minutes before cooking.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it's shimmering but not smoking.

    Cook the Steak

    Once the oil is hot, add the ribeye steaks to the skillet. Cook for 4-5 minutes on one side, without moving them, until a nice crust forms.

    Flip and Add Rosemary

    Flip the steaks and add the fresh rosemary sprigs to the pan. Cook for another 4-5 minutes for medium-rare, or until the desired doneness is reached.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

Preparing the Mashed Potatoes

    Peel and Cut Potatoes

    Peel the large potatoes and cut them into quarters for quicker cooking.

    Boil the Potatoes

    Place the cut potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes, or until potatoes are tender when pierced with a fork.

    Drain the Potatoes

    Drain the potatoes in a colander and return them to the pot.

    Mash the Potatoes

    Add butter, milk, salt, and black pepper to the drained potatoes. Use a potato masher or a fork to mash until smooth and creamy.

    Serve

    Serve the mashed potatoes alongside the sliced ribeye steak for a delicious meal.
