Method

Prepare the Quinoa

  1. 1

    Rinse the Quinoa

Place the quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes. This removes the natural saponins that can give quinoa a bitter taste.

  2. 2

    Cook the Quinoa

In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.

  3. 3

    Fluff and Cool

Remove the saucepan from heat and let it sit covered for 5 minutes. After that, fluff the quinoa with a fork and spread it onto a baking sheet to cool.

Prepare the Vegetables

  1. 4

    Chop the Vegetables

While the quinoa is cooking, chop the cherry tomatoes in half, dice the cucumber, chop the red bell pepper, and finely dice the red onion. Place them in a large mixing bowl.

  2. 5

    Add Fresh Herbs

Finely chop the fresh parsley and add it to the bowl with the chopped vegetables.

Make the Dressing

  1. 6

    Combine the Dressing Ingredients

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper until well combined.

Assemble the Salad

  1. 7

    Mix the Salad

Once the quinoa has cooled, add it to the bowl with the chopped vegetables and parsley. Pour the dressing over the salad and toss gently until everything is well combined.

  2. 8

    Serve

Taste the salad and adjust the seasoning with more salt and pepper if needed. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
