Pimento Cheese Dip

    Prepare the Cheese Base

    In a mixing bowl, combine the cream cheese and mayonnaise. Mix with a hand mixer or spoon until smooth and creamy.

    Add Cheeses and Spices

    Fold in the sharp cheddar cheese, diced pimentos, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined.

    Chill the Dip

    Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.

    Prepare the Potatoes

    Wash and scrub the potatoes thoroughly. Slice them thinly using a mandoline or a sharp knife.

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Chips

    Remove the potatoes from the water and pat them dry with paper towels. Carefully add a handful of potato slices to the hot oil and fry until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
