Method

Cooking the Shrimp

  1. 1

    Prepare the Shrimp

In a large pot, bring 4 cups of water to a boil. Once boiling, add the shrimp and 2 tablespoons of Old Bay seasoning.

  2. 2

    Boil the Shrimp

Cook the shrimp for 2-3 minutes or until they turn pink and opaque. Do not overcook.

  3. 3

    Drain and Cool

Remove the shrimp from the pot, drain, and place them in a bowl filled with ice water to stop the cooking process. Let them cool for about 5 minutes, then drain again and chop into bite-sized pieces.

  4. 4

    Add Lemon Juice

Once cooled, drizzle 2 tablespoons of lemon juice over the chopped shrimp and toss to coat.

Assembling the Salad

  1. 5

    Mix the Salad Ingredients

In a large mixing bowl, combine the finely chopped celery, diced red bell pepper, and sliced green onions.

  2. 6

    Combine Shrimp and Dressing

Add the shrimp to the mixing bowl with the vegetables. In a separate small bowl, whisk together 1 cup of mayonnaise, 1 tablespoon of Dijon mustard, 1 teaspoon of salt, and 1 teaspoon of black pepper.

  3. 7

    Toss Salad Together

Pour the dressing over the shrimp and vegetable mixture. Gently toss until everything is evenly coated.

  4. 8

    Serve

Serve the shrimp salad on lettuce leaves for a fresh presentation. Enjoy chilled or at room temperature.
