Salad Preparation

    Prepare the Lettuce

    Wash the romaine lettuce under cold water. Dry thoroughly using a salad spinner or paper towels. Tear the lettuce into bite-sized pieces and place in a large salad bowl.

    Prepare the Vegetables

    Halve the cherry tomatoes and add them to the salad bowl. Peel the cucumber, slice it in half lengthwise, and then slice it into half-moon shapes. Add the cucumber to the bowl.

    Cook the Green Beans

    Trim the ends of the green beans and blanch them in boiling water for about 3 minutes until bright green and tender-crisp. Drain and immediately place in ice water to stop cooking. Once cooled, drain again and add to the salad bowl.

    Prepare the Hard-Boiled Eggs

    Place the eggs in a pot and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit for 10-12 minutes. Drain and cool in cold water. Once cooled, peel the eggs and cut them into quarters. Set aside.

    Drain the tuna and flake it with a fork. Add the tuna to the salad bowl along with the black olives.

    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.

Assembly

    Drizzle the dressing over the salad and toss gently to combine. Arrange the quartered hard-boiled eggs on top of the salad. Serve immediately.
