In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour until well combined. Stir continuously for about 20-30 minutes, until the roux turns a dark brown color, resembling chocolate.

Once the roux is ready, add the chopped onion, green bell pepper, and celery (the 'holy trinity' of Cajun cooking). Cook for about 5-7 minutes until the vegetables are tender.
Building the Gumbo

Stir in the sliced Andouille sausage and chicken thighs. Cook for another 5-7 minutes until the chicken is browned.

Add the minced garlic, bay leaves, thyme, cayenne pepper, paprika, salt, and black pepper. Stir well to combine all ingredients.

Pour in the chicken broth and water. Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes.
