Lobster Preparation

Boil the Lobster
In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt to the boiling water. Carefully add the live lobsters to the pot and cover. Cook for about 8-10 minutes, or until the lobsters turn bright red.

Cool and Shell the Lobster
Once cooked, remove the lobsters from the pot and let them cool for a few minutes. Once cool enough to handle, twist off the claws and tail, and remove the meat. Chop the lobster meat into bite-sized pieces.

Prepare the Filling
In a mixing bowl, combine 1 cup of mayonnaise, 2 tbs of chopped chives, 1 tbs of lemon juice, 1 tsp of black pepper, and 0.5 tsp of salt. Mix well until all ingredients are thoroughly combined.

Add Lobster Meat
Gently fold the chopped lobster meat into the mayonnaise mixture until evenly coated.

Toast the Buns
In a skillet over medium heat, melt 2 tbs of unsalted butter. Split the hot dog buns and place them cut side down in the skillet. Toast until golden brown, about 2-3 minutes.

Assemble the Lobster Rolls
Once the buns are toasted, remove them from the skillet and fill each bun with the lobster mixture. Serve immediately.
