Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the salmon is well coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  3. 3

    Grill the Salmon

Once the grill is ready, place the marinated salmon fillets skin-side down on the grill. Cook for about 6-8 minutes on each side or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

Wash and cut the asparagus into 2-inch pieces, slice the zucchini into rounds, and chop the bell pepper into strips.

  2. 5

    Season the Vegetables

In a large bowl, combine the cut vegetables with olive oil, salt, and black pepper. Toss to coat evenly.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill and allow to rest for a couple of minutes. Serve the grilled salmon with a side of seasonal vegetables on each plate.
