Chicken Preparation

Marinate the Chicken
In a large bowl, combine Piri Piri sauce, olive oil, salt, and black pepper. Add the whole Red Bird chicken, ensuring it's well coated. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.

Grill the Chicken
Preheat your grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 30-40 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the skin is crispy and charred. Remove from the grill and let it rest for 10 minutes before carving.

Prepare the Broccolini
While the chicken is marinating, wash the broccolini under cold water and trim the ends. Mince the garlic cloves.

Sauté the Broccolini
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the broccolini, salt, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the broccolini is tender and slightly charred.

Plate the Dish
On a large serving platter, arrange the carved chicken alongside the sautéed broccolini. Garnish with lemon wedges to squeeze over the chicken and broccolini before serving.
