Method

Salad Preparation

  1. 1

    Prepare the Salad Base

In a large mixing bowl, combine the mixed greens and sliced radishes. Gently toss them together to combine.

  2. 2

    Add Fresh Cheese

Crumble or dollop the fresh cheese over the salad mixture. Ensure it is evenly distributed.

Seeded Granola Preparation

  1. 3

    Make the Seeded Granola

Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, pumpkin seeds, sunflower seeds, honey, olive oil, and salt. Mix well until all dry ingredients are coated with honey and oil.

  2. 4

    Bake the Granola

Spread the granola mixture evenly on a baking sheet lined with parchment paper. Bake for about 15-20 minutes, stirring halfway through, until golden brown. Remove from the oven and let it cool completely.

Shallot Vinaigrette Preparation

  1. 5

    Prepare the Vinaigrette

In a small bowl, whisk together finely chopped shallots, red wine vinegar, Dijon mustard, and olive oil. Season with salt and freshly ground black pepper to taste.

Assembly

  1. 6

    Assemble the Salad

Drizzle the shallot vinaigrette over the salad base and toss to combine. Top with the cooled seeded granola.

  2. 7

    Serve

Serve the Earl’s Gem Salad immediately, garnished with extra fresh cheese if desired.
