Crispy Fried Cod

Prepare the Cod
Rinse the cod fillets under cold water and pat them dry with paper towels.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Add Water
Gradually add ice-cold water to the dry ingredients, whisking until smooth. The batter should be thick enough to coat the back of a spoon.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cod
Dip each cod fillet into the batter, allowing excess to drip off, then carefully place it into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

Drain and Serve
Remove the fried cod from the oil and place it on a plate lined with paper towels to drain excess oil. Serve hot.
Jalapeño-Dill Tartar Sauce

Mix the Sauce
In a medium bowl, combine the mayonnaise, dill pickles, fresh dill, jalapeño, lemon juice, salt, and black pepper. Mix well until all ingredients are incorporated.

Cover the tartar sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve the crispy fried cod with jalapeño-dill tartar sauce on the side and drizzle with malt vinegar to taste.
