Method

Prepare the Cake

  1. 1

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 20-second intervals, stirring after each, until fully melted and smooth. Set aside to cool slightly.

  2. 2

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

  3. 3

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and salt. Stir until well combined.

  4. 4

    Add Flour

Sift the all-purpose flour over the chocolate mixture and fold gently until just combined.

Bake the Cakes

  1. 5

    Prepare Ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder, tapping out the excess.

  2. 6

    Fill Ramekins

Divide the cake batter evenly among the prepared ramekins, filling each about 3/4 full.

  3. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Serve

  1. 8

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, allowing the cake to release. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
