Method

Preparation of Crab

  1. 1

    Thawing the Crab

If the crab clusters are frozen, place them in the refrigerator for 8-12 hours or submerge them in cold water for 30-60 minutes to thaw.

  2. 2

    Cleaning the Crab

Rinse the thawed crab clusters under cold running water to remove any ice crystals or impurities.

  3. 3

    Chilling the Crab

Place the cleaned crab clusters in a bowl and refrigerate them for at least 30 minutes before serving.

Preparation of House Cocktail Sauce

  1. 4

    Mixing the Ingredients

In a bowl, combine 1 cup of ketchup, 2 tablespoons of horseradish, 1 tablespoon of lemon juice, 1 teaspoon of Worcestershire sauce, and hot sauce to taste. Stir until well blended.

  2. 5

    Chilling the Sauce

Cover the bowl with plastic wrap and refrigerate the cocktail sauce for at least 30 minutes to allow the flavors to meld.

Preparation of Drawn Butter

  1. 6

    Melting the Butter

In a small saucepan over low heat, melt 1 cup of unsalted butter until completely liquid. Do not let it boil.

  2. 7

    Keeping it Warm

Transfer the melted butter to a serving dish and keep warm until ready to serve.

Serving

  1. 8

    Plating the Crab

Arrange the chilled crab clusters on a serving platter.

  2. 9

    Serving with Accompaniments

Serve the crab with the house cocktail sauce, drawn butter, and a fresh lemon cut into wedges.
