Method

Filling Preparation

  1. 1

    Mix the Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

  2. 2

    Add Sugar and Sour Cream

Gradually add granulated sugar and continue to beat until well combined. Add sour cream and vanilla extract, then mix until fully incorporated.

  3. 3

    Incorporate Eggs

Add the eggs one at a time, mixing on low speed just until combined after each addition. Avoid overmixing to prevent air bubbles.

  4. 4

    Pour the Filling

Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

  5. 5

    Bake the Cheesecake

Bake in the preheated oven at 325°F (160°C) for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.

  6. 6

    Cool and Chill

Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight before serving.
