Dip Preparation

    Prepare and Char the Corn

    Preheat your grill or grill pan over medium-high heat. Remove the husks and silk from the ears of corn. Place the corn directly on the grill, turning occasionally, until charred (about 10-15 minutes). Remove from grill and let cool.

    Slice Corn Kernels Off Cobs

    Once the corn is cool enough to handle, carefully cut the kernels off the cobs using a sharp knife. Set aside.

    Prepare Other Ingredients

    Dice the red onion and chop the cilantro. Cut the avocados in half, remove the pit, scoop out the flesh, and place it in a mixing bowl.

    In the bowl with the avocados, add the charred corn kernels, diced red onion, chopped cilantro, lime juice, olive oil, salt, black pepper, and red chili flakes.
