Prepare the Beef
In a skillet over medium heat, combine the ground beef, ancho chili powder, garlic powder, onion powder, cumin, salt, and black pepper. Cook, stirring frequently, until the beef is browned and cooked through, about 8-10 minutes.
Habanero Sauce

Make the Habanero Sauce
In a blender, combine the habanero peppers, lime juice, salt, and water. Blend until smooth. Adjust seasoning if necessary and set aside.
Tomatillo Aioli

Prepare the Tomatillo Aioli
Roast the tomatillos in the oven at 400°F (200°C) for about 10 minutes until slightly charred. In a blender, combine the roasted tomatillos, mayonnaise, garlic, lime juice, and salt. Blend until smooth and creamy.

Assemble the Street Tacos
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side. On each tortilla, add a generous spoonful of the beef filling, drizzle with habanero sauce, add a dollop of tomatillo aioli, and top with pickled onion, sliced avocado, Cotija cheese, and pico de gallo. Serve immediately.
