Scallops and Bacon

Method

Prepare the Bacon and Scallops

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place on paper towels to drain excess fat. Once cooled, chop into small pieces.

    Sear the Scallops

    In the same skillet, add olive oil and heat over medium-high. Season scallops with salt and black pepper. Sear scallops for 2-3 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.

Prepare the Salad

    Caramelize the Onions

    Add butter to the skillet and reduce heat to medium-low. Slice the onion thinly and add to the skillet. Cook for 10-15 minutes, stirring occasionally, until onions are soft and caramelized.

    Assemble the Salad

    In a large bowl, combine fresh spinach and romaine lettuce. Drizzle with balsamic vinaigrette and toss to coat evenly. Add caramelized onions, chopped bacon, and shaved gruyere cheese. Core and slice the green apple, and add it to the salad.

Serve

    Plate the Dish

    On a large serving plate, create a bed of the salad mixture. Arrange the seared scallops on top of the salad. Optionally, drizzle with additional balsamic vinaigrette before serving.
