Method
Prepare the Fried Chicken

In a bowl, combine the buttermilk and Cajun seasoning. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or preferably overnight.

In a separate bowl, mix together the flour, salt, and pepper.

Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C).

Remove the chicken from the buttermilk, letting the excess drip off. Dredge each chicken breast in the flour mixture, making sure to coat thoroughly.

Carefully place the coated chicken breasts in the hot oil. Fry until golden brown and cooked through, about 6-8 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
Make the Spicy Aioli

In a small bowl, combine the mayonnaise, Sriracha sauce, minced garlic, and lemon juice. Mix well until smooth and adjust seasoning if desired.
Assemble the Sandwich

Slice the brioche rolls in half and toast them lightly if desired.

Spread a generous amount of spicy aioli on the bottom half of each roll.

Place a fried chicken breast on top of the aioli, followed by a lettuce leaf, sliced tomato, and onion.

Top with the other half of the brioche roll and serve immediately.
