Preparation

1

Prepare the Ingredients

Start by preparing the main ingredients. Shell the edamame if not already done. Dice the jalapenos, chop the onion, and dice the tomato. Slice the avocado and crumble the Cotija cheese. Chop the cilantro as well.

Cooking

2

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced jalapenos. Sauté for 3-4 minutes until the onion becomes translucent.

3

Add Edamame

Add the shelled edamame to the skillet and continue to sauté for another 5 minutes, stirring occasionally.

4

Season the Mixture

Sprinkle in the chili flakes and sesame seeds. Stir well to combine all the ingredients, and sauté for an additional 2 minutes.

5

Mix in Chipotle Aioli

Remove the skillet from heat and stir in the chipotle aioli until the edamame and vegetables are well coated.

Assembly

6

Plate the Dish

On a serving plate, layer the sautéed edamame mixture. Top with diced tomato, sliced avocado, and crumbled Cotija cheese.

7

Garnish and Serve

Garnish the dish with chopped cilantro. Serve immediately and enjoy!
