Cajun Shrimp Pasta Recipe
Cajun dusted shrimp sautéed with bacon, tomatoes, andouille sausage, chopped shishito peppers, corn and onions all tossed with penne pasta in a Cajun white wine butter sauce.

Cooking the Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Preparing the Cajun Shrimp and Sauce

Cook the Bacon
In a large skillet over medium heat, add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.

Cook the Sausage
Add the sliced andouille sausage to the skillet and cook for another 3-4 minutes until browned.

Add Shrimp and Seasoning
Toss in the shrimp and sprinkle with Cajun seasoning. Cook until shrimp turn pink, about 3-5 minutes.

Add Corn and Tomatoes
Stir in the corn and halved cherry tomatoes. Cook for an additional 2 minutes.

Deglaze with Wine
Pour in the white wine, scraping up any bits from the bottom of the skillet. Allow it to simmer for 2-3 minutes to reduce slightly.

Combining Pasta and Sauce

Toss Pasta
Add the cooked penne pasta to the skillet, tossing to coat it in the sauce. Mix in the crispy bacon and chopped parsley for garnish.

Serve
Serve immediately, garnished with extra parsley if desired.
