    Prepare the Pork

    Season the pork tenderloin with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned, about 4-5 minutes. Remove from skillet and let rest.

    Roast the Tomatoes

    In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they begin to blister. Add minced garlic and fresh thyme, stirring for another 1 minute.

    Add Cannellini Beans

    Drain and rinse the cannellini beans, then add them to the skillet. Stir gently to combine and heat through for about 5 minutes.

    Finish the Dish

    Slice the rested pork into medallions and return to the skillet. Add truffle butter, stirring until melted and combined. Adjust seasoning if necessary.

    Serve

    Plate the pork medallions over the cannellini beans and roasted tomatoes. Drizzle with remaining olive oil if desired.
