    Make the Flatbread Dough

    In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until it becomes frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare the Pesto

    In a food processor, combine pistachios, basil, garlic, Parmesan cheese, and salt. Pulse until coarsely chopped. While the processor is running, slowly add olive oil until the pesto reaches your desired consistency.

    Preheat the Oven

    Preheat your oven to 475°F (245°C).

    Roll Out the Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 2 equal portions. Roll each portion into a flat round shape about 1/4 inch thick.

    Assemble the Flatbread

    Place the rolled out flatbread onto a baking sheet. Spread a generous layer of pistachio pesto over the surface. Sprinkle shredded mozzarella and a little Parmesan cheese on top.

    Bake

    Bake in the preheated oven for 10-12 minutes or until the edges are golden and the cheese is bubbly.

    Remove from the oven, slice, and serve warm.
