Instructions
1. Make the Pasta
In a large bowl, combine the flour and eggs. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic and let rest for 30 minutes.
2. Roll Out the Pasta
After resting, roll out the dough using a pasta machine or a rolling pin to your desired thickness. Cut into desired shapes (e.g., macaroni or shells).
3. Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook for 2-4 minutes, or until al dente. Drain and set aside.
4. Prepare the Cheese Sauce
In a saucepan, melt the butter over medium heat. Add the milk and bring to a simmer. Stir in the ricotta, mozzarella, cheddar, parmesan, gruyère, fontina, and gorgonzola cheese, mixing until melted and smooth. Season with salt and black pepper to taste.
5. Combine Pasta and Sauce
Add the cooked pasta to the cheese sauce and stir to combine. Cook for an additional 2-3 minutes on low heat to warm through.
6. Serve
Serve hot, garnished with additional cheese if desired.
