    Make the Filling

    In a mixing bowl, combine chopped corned beef, drained sauerkraut, shredded Swiss cheese, and softened cream cheese. Mix until well combined.

    Assemble the Egg Rolls

    Lay an egg roll wrapper on a clean surface with a corner pointing towards you. Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides inward and roll tightly to seal. Use a bit of water to moisten the edges to help seal.

    Fry the Egg Rolls

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

    Serve with Special Sauce

    Serve warm with your choice of special sauce, such as a thousand island dressing or a spicy mustard.
