Grilled Salmon Directions

    Prepare the Garlic Butter

    Melt the butter in a small saucepan over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat and set aside.

    Cook the Faro

    In a medium saucepan, bring 3 cups of water to a boil. Add faro and a pinch of salt. Reduce heat and simmer for about 30 minutes until tender. Drain and set aside.

    Make Creamed Spinach

    In a large skillet, heat olive oil over medium heat. Add spinach and cook until wilted. Stir in heavy cream and simmer until thickened, about 5 minutes. Season with salt and pepper to taste.

    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15-20 minutes until soft.

    Grill the Salmon

    Preheat the grill to medium-high heat. Season salmon fillets with salt, pepper, and a squeeze of lemon juice. Grill for 5-6 minutes per side, or until cooked through and flaky.

    Serve

    Plate the grilled salmon alongside faro, creamed spinach, and roasted tomatoes. Drizzle with garlic butter and garnish with lemon wedges.
