    Prepare the Fries

    Wash and peel the russet potatoes. Cut them into fries of desired thickness.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Fries

    Drain the fries and pat them dry. In a bowl, toss the fries with olive oil, salt, pepper, and chopped rosemary.

    Bake the Fries

    Spread the fries evenly on a baking sheet and bake for 25-30 minutes or until golden brown and crispy, turning halfway through.

    Make the Gravy

    In a saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour to create a roux and cook for 2-3 minutes.

    Add Broth

    Gradually whisk in the broth, stirring constantly to prevent lumps. Add garlic powder, onion powder, salt, and pepper.

    Simmer the Gravy

    Bring the mixture to a simmer and cook for about 5-7 minutes until thickened. Adjust seasoning to taste.
