Cook the Arborio Rice
In a medium saucepan, combine 1 cup of Arborio rice with 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is creamy and tender. Set aside to cool.

Prepare the Sushi Roll
Lay out a slice of prosciutto on a clean surface. Spread a thin layer of the cooked Arborio rice on top of the prosciutto, leaving a small border around the edges. Place a few strips of roasted red peppers and mozzarella cheese in the center.

Roll the Sushi
Carefully roll the prosciutto around the filling, starting from one end and rolling tightly. Repeat the process with the remaining ingredients to make additional rolls.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium heat until hot.

Fry the Sushi Rolls
Once the oil is hot, gently place the sushi rolls in the oil, frying them until golden brown and crispy, about 2-3 minutes each side. Remove and drain on paper towels.

Slice the fried sushi rolls into bite-sized pieces and drizzle with balsamic glaze and pesto mayo before serving.
