Caramelize the Onions
In a large pot, melt the unsalted butter over medium heat. Add the sliced yellow onions and a pinch of salt. Cook, stirring occasionally, until the onions are deeply caramelized, about 30-40 minutes.

Add Garlic and Deglaze
Add the minced garlic and cook for an additional 2 minutes until fragrant. Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom.

Add Broth and Herbs
Stir in the beef broth, thyme, bay leaves, salt, and pepper. Bring the mixture to a simmer and cook for 30 minutes.

Prepare the Crostini
While the soup simmers, preheat your oven to 375°F (190°C). Slice the French bread into 1-inch thick slices. Brush both sides with olive oil and place on a baking sheet. Bake for about 10-15 minutes until golden and crispy.
