Preparation

    Prepare the Meatloaf

    Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, Worcestershire sauce, salt, pepper, thyme, and Dijon mustard. Mix until just combined.

    Shape and Bake

    Transfer the meat mixture to a loaf pan and shape it into a loaf. Place in the preheated oven and bake for 1 hour or until the internal temperature reaches 160°F (70°C).

    Make Buttermilk Mashed Potatoes

    While the meatloaf bakes, peel and chop 2 lbs of potatoes and boil until tender. Drain and mash with ½ cup of buttermilk, 2 tbs of butter, salt and pepper to taste.

    Prepare Crispy Onions

    In a skillet, heat oil over medium heat. Thinly slice 1 onion and fry until golden brown and crispy. Drain on paper towels.

    Make Brown Gravy

    In a saucepan, melt 2 tbs of butter, whisk in 2 tbs of flour and cook for 1 minute. Gradually add 2 cups of beef broth, whisking until thickened. Season with salt and pepper.

    Serve

    Slice the meatloaf and serve with buttermilk-mashed potatoes, crispy onions on top, and drizzle with house brown gravy.
