    Prepare the batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps. Let the batter rest for about 15 minutes.

    Prepare the fish

    Pat the haddock fillets dry with paper towels. Season lightly with salt and pepper on both sides.

    Heat the oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Batter the fish

    Dip each haddock fillet into the batter, allowing any excess to drip off.

    Fry the fish

    Carefully place the battered fish into the hot oil, cooking in batches if necessary. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare garlic butter

    In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
