In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then stir in birria seasoning. Cook for an additional 2 minutes, then remove from heat.

Layer the Nachos
On a large baking sheet or platter, start with a layer of corn tortilla chips. Top with half of the ground beef, half of the beer cheese, and half of the cotija cheese.

Add More Layers
Add another layer of corn tortilla chips, followed by the remaining ground beef, pico de gallo, sweeties candied jalapenos, and pickled red onions. Drizzle with jalapeno ranch.

Top with a final layer of corn tortilla chips, the remaining beer cheese, and cotija cheese.

Preheat the oven to 350°F (175°C). Bake the nachos for about 10-15 minutes or until the cheese is melted and bubbly.

Remove from the oven and let cool slightly before serving. Drizzle with additional jalapeno ranch if desired.
