Method

Prepare the Tartare

    Chop the Mushrooms

    Finely chop the wild mushrooms and shallot. Combine them in a bowl.

    Mix Ingredients

    Add olive oil, lemon juice, chopped dill, salt, and pepper to the mushroom mixture. Mix well and set aside.

Create Balsamic Pearls

    Prepare Balsamic Pearls

    In a small saucepan, combine balsamic vinegar and agar-agar. Bring to a boil, stirring constantly, then remove from heat and let it cool slightly.

    Form Pearls

    Using a dropper, drop the balsamic mixture into a bowl of cold oil to form pearls. Let them sit for a few minutes to set before removing.

Whip the Chèvre

    Whip the Cheese

    In a mixing bowl, combine chèvre cheese, heavy cream, chopped dill, and salt. Whip until light and fluffy.

Assembly

    Spoon the mushroom tartare into waffle cones, top with whipped chèvre, and garnish with balsamic pearls. Serve immediately.
