Preparing the Flatbread

    Make the Flatbread Dough

    In a large bowl, combine all-purpose flour, salt, and sesame seeds. Gradually add water and olive oil to form a dough. Knead for about 5 minutes until smooth.

    Roll Out the Dough

    Preheat the oven to 475°F (245°C). Roll out the dough on a floured surface to your desired thinness. Place on a baking sheet lined with parchment paper.

    Bake the Flatbread

    Bake in the preheated oven for 10-12 minutes or until golden and crispy. Remove and let cool.

Preparing the Tuna Tartare

    Prepare the Tuna

    Finely dice the yellowfin tuna and place in a bowl. Add lime juice, soy sauce, sesame oil, and chopped scallions. Mix gently to combine.

Assembling the Flatbread

    Spread the tuna tartare evenly over the baked flatbread. Top with baby kale and marinated olives.

    Drizzle harissa aïoli over the assembled flatbread before serving.
