    Make the Citrus Rémoulade

    In a bowl, combine mayonnaise, lemon juice, Dijon mustard, chopped capers, minced garlic, and chopped parsley. Season with salt and black pepper to taste. Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

Cooking Scallops

    Smoke the Scallops

    Preheat your smoker to 225°F (107°C). Season the Digby scallops lightly with salt and place them on the smoker rack. Smoke the scallops for about 15-20 minutes or until they are cooked through and slightly firm to the touch.

Serving

    Plate the Dish

    Remove the smoked scallops from the smoker and let them rest for a few minutes. Serve the scallops on a plate with a generous dollop of citrus rémoulade on the side. Sprinkle dulse powder over the scallops and garnish with lemon wedges.
