Preparation

Roast the Kohlrabi
Preheat the oven to 400°F (200°C). Peel and cut the kohlrabi into wedges. Toss with olive oil, salt, and black pepper.

Bake
Spread the kohlrabi on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.

Cook the Buckwheat
While the kohlrabi is roasting, rinse the buckwheat under cold water. In a pot, combine 1 cup of buckwheat with 2 cups of water, bring to a boil, then reduce to a simmer for 15 minutes. Drain any excess water.

Make the Dressing
In a small bowl, mix together the split pea miso, saffron, lemon juice, and water until smooth.
Assembly

Combine and Serve
In a large bowl, combine the roasted kohlrabi, cooked buckwheat, and saffron & miso dressing. Toss gently to coat and serve warm or at room temperature.
