Preparation of the Filling

    Cook the Vegetables

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and celery, sauté until soft, about 5 minutes. Add minced garlic and cook for an additional minute.

    Combine with Chicken

    Stir in the shredded chicken, chicken broth, salt, pepper, thyme, and bay leaf. Bring to a simmer and let cook for 15 minutes. Remove the bay leaf and set aside.

Preparation of the Rappie Pie Base

    Prepare the Potatoes

    In a large bowl, combine the grated potatoes, grated onion, salt, and pepper. Mix well.

    Add Butter

    Stir in the melted butter until everything is well combined.

Assembling the Pie

    Grease the Baking Dish

    Preheat the oven to 350°F (175°C). Grease a large baking dish with butter.

    Layer the Ingredients

    Spread half of the potato mixture evenly in the bottom of the prepared dish. Pour the chicken filling over it, then top with the remaining potato mixture.

    Bake the Rappie Pie

    Bake in the preheated oven for 1 hour, or until the top is golden brown. Sprinkle with paprika before serving.
