Method

Foie Gras Terrine Preparation

    Prepare the Foie Gras

    In a bowl, season the foie gras with salt, white pepper, and cognac. Let it marinate for at least 1 hour.

    Melt the Gelatin

    Soak the gelatin sheets in cold water for 5 minutes, then dissolve in warm apple cider.

    Blend and Set

    Blend the marinated foie gras until smooth. Mix in the dissolved gelatin. Pour into a terrine mold and refrigerate for at least 6 hours or until set.

Apple and Walnut Compote Preparation

    Cook the Apples

    In a skillet, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, and chopped walnuts. Cook until the apples are soft and caramelized, about 10 minutes.

Brioche French Toast Preparation

    In a bowl, whisk together the eggs, milk, and vanilla extract.

    Dip each slice of brioche into the egg mixture, then fry in butter over medium heat until golden brown on both sides, about 3-4 minutes per side.
