Lamb Preparation

    In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, salt, and black pepper. Add the lamb shoulder and rub the marinade all over it. Cover and refrigerate for at least 4 hours, preferably overnight.

    Preheat your oven to 325°F (165°C). Place the marinated lamb in a roasting pan and cover with foil. Roast for about 3 hours, or until the lamb is tender and easily pulls apart with a fork. Remove the foil during the last 30 minutes to allow it to brown.
