Inspired by Chef Lawrence’s grandmother’s take on the classic dish enjoyed across Ontario, New Brunswick, and Québec. Smoked brisket, fingerling potatoes, heirloom carrots, and local turnips simmered in a dashi-like stock.

Prepare the Dashi-like Stock
In a large pot, bring the water to a gentle boil. Add the dried bonito flakes and kombu. Let it simmer for 10 minutes, then strain the liquid to remove the solids. Return the strained liquid to the pot.

Add Seasonings
Stir in the soy sauce, mirin, and salt into the stock and bring it back to a gentle simmer.
Cooking the Main Ingredients

Simmer the Brisket
Add the smoked brisket to the pot and allow it to simmer for about 1 hour until it is tender.

Serve
Remove the brisket from the pot, slice it, and serve it alongside the vegetables with a ladle of the stock over everything.
