Leek Piccalilli Preparation

    Prepare the Piccalilli

    In a saucepan, combine chopped leeks, cauliflower florets, white vinegar, turmeric, mustard seeds, salt, and sugar. Bring to a boil and then simmer for 15-20 minutes until the vegetables are tender. Let cool.

Beef Marrow Preparation

    Roast the Marrow

    Preheat the oven to 220°C (428°F). Place the beef marrow bones on a baking tray and roast for 25-30 minutes until the marrow is soft and starting to separate from the bone.

    Prepare the Cheese Mixture

    Once the marrow is done, scoop it out and mix it with grated Knoydart Farm cheddar and shaved black winter truffle in a bowl. Season with salt and pepper to taste.

Assembly and Grilling

    Assemble the Rarebit

    Spread the cheese and marrow mixture over the slices of sourdough bread. Top with a dollop of leek piccalilli.

    Grill the Sandwiches

    Preheat a grill or a grill pan over medium heat. Grill the assembled sandwiches for 3-4 minutes on each side until golden brown and the cheese is melted.

    Garnish and Serve

    Remove from the grill, sprinkle with fresh chives, and serve immediately with extra leek piccalilli on the side.
