Preparation

    Cook Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork and set aside.

    Prepare Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and diced red onion, sautéing until fragrant. Add beach peas, asparagus, and cherry tomatoes, cooking until tender.

    Cook Seafood

    In the same skillet, push vegetables to the side and add remaining olive oil. Add scallops and shrimp, cooking for about 3-4 minutes until they are opaque and cooked through. Season with salt and black pepper.

    Combine

    Add white wine and vegetable broth to the skillet, stirring gently to combine. Let it simmer for 2-3 minutes to blend flavors. Stir in fresh dill.

    Serve

    Serve the seafood and vegetable mixture over a bed of quinoa. Enjoy your East Coast-inspired dish!
