    Prepare the Potatoes

    Wash and peel the potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes into thin rounds (about 1/8 inch thick).

    Soak the Potatoes

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

    Heat the Oil

    In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

    Fry the Chips

    Remove the potato slices from the water and pat them dry with a paper towel. Fry the potato slices in batches, being careful not to overcrowd the pot. Fry each batch for about 3-5 minutes or until golden brown and crispy.

    Using a slotted spoon, transfer the fried chips to a paper towel-lined plate to drain excess oil. While still warm, sprinkle with salt, paprika, garlic powder, and black pepper to taste.
