1. Prepare the Meats
In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the pork shoulder and chicken thighs, searing until browned on all sides. Remove the meats and set aside.
2. Sauté Vegetables
In the same pot, add the chopped onion and sauté until translucent. Stir in the diced potatoes and cook for an additional 5 minutes.
3. Combine Ingredients
Return the seared meats to the pot. Add the canned diced tomatoes, frozen corn, chicken broth, salt, black pepper, paprika, garlic powder, and thyme. Stir well to combine.
4. Simmer the Stew
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours, or until the meats are tender and the flavors meld together.
5. Serve
Once cooked, remove the chicken and pork, shred or chop into bite-sized pieces, and return to the pot. Adjust seasoning if necessary. Serve hot.
