Soak the Beans
Rinse the dry navy beans under cold water, then place them in a large pot with 6 cups of water. Let them soak overnight or for at least 8 hours. Drain and rinse the beans before using.

Cook the Beans
In a large pot or Dutch oven, add the soaked beans and cover them with fresh water. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender. Drain and set aside.

Prepare the Mixture
Preheat your oven to 325°F (165°C). In a large mixing bowl, combine the cooked beans, chopped onion, brown sugar, molasses, mustard powder, salt, black pepper, and hot sauce. Mix well.

In a baking dish, layer the bacon or salt pork at the bottom, then pour the bean mixture over it. Spread the mixture evenly.
